Scrumptious Banana Bars with Cream Cheese Frosting




This is one of my all- time favorite quick desserts to make and honestly I haven't met one person who has tried it who doesn't ask for the recipe even if they're not a banana fan.  It's a keeper and can be whipped up in no time flat.


Ingredients:
Cake
1/2 cup butter
1 1/2 cup sugar
2 eggs
1 cup sour cream
2 cups flour
1 tsp baking soda
1/4 tsp salt
 1 cup ripe mashed bananas

Cream Cheese Frosting
1/2 cup butter softened
1 8 oz cream cheese
4 cups powdered sugar (or Icing Sugar if you're Canadian!)
2 tsp vanilla

Cream butter and sugar
Add eggs and mix

Add sour cream
Add Vanilla (I love Kirkland brand)
Add flour
Add baking soda and salt
Take 3 ripe bananas and mash with fork
Mix well and pour into a greased
jelly roll pan.  If you would like a thicker cake you can use 9x13 but I like to do bars or thinner version of cake.
Bake at  350 for 25 minutes.  Don't over bake or they will be dry.
Let cool and in the
 meantime make cream cheese frosting.
Cream butter and cream cheese
Add 2 cups powdered sugar
add vanilla



Mix and then scrape down bowl with spatula and add rest of powdered sugar
continue to mix until desired consistency

Top banana cake with cream cheese frosting and spread
Cut into desired sized squares.  I cut 48 bars and probably ate all but 8!  Ha!
You definitely could add chocolate chips to this recipe and it would be even better!  :)

  2. ok, I'm so going in my kitchen right now to make this! Looks so yummy and i have 3 brown bananas that are headed for the garbage today if I don't use them. Thanks for helping me use them up with such a great idea.
