Heartwarming Beef Stew(Prince Edward Island Style)


It's that time of the year when it's cold outside and we love to warm up with delicious soups and stews!  This is my absolute favorite Beef Stew recipe.  My sister in law served her mission for the LDS church in PEI (Prince Edward Island), the smallest Canadian Province.  She received this recipe from a friend there and shared it with me.  I have made it for the past 20 years or more because it is savory and hits the spot on a cold, winters day!   If you stick around after the recipe I will tell you about our family trip to PEI!  It was probably one of my favorite family vacation spots with adventures to last a lifetime!


 I've adapted the recipe a bit over the years adding stewed tomatoes and more spices
1 1/2 lbs stewing beef
4 Tbsp soy sauce
3 Tbsp worcestershire sauce
3 Tbsp ketchup
2 cans stewed tomatoes (blended in blender)
2 tsp basil (I tend to use much more for flavor!)
1 tsp oregano (use more)
1 tsp thyme
8 carrots
5 med potatoes
2-3 small yellow onion
peas


I've found Laura's lean beef is perfect for this recipe!  Very little fat and the beef flakes beautifully when slow cooked so it's almost like a pot roast...
Here's where you get all the flavor!
Brown meat in soy sauce, worcestershire sauce, ketchup, stewed tomatoes, basil, oregano and thyme. 
Stir well and bring to a boil.  Cover and simmer for one hour stirring occasionally.
Add vegetables
Add enough water to cover vegetables.  Bring to a boil then simmer another hour or until vegetables are tender.  Add peas and serve.


Delicious!!!! Serve with warm bread or rolls  and a yummy salad!

  For any of you Anne of Green Gables fans, PEI is where L.M. Montgomery is from and where she based her book.  We met some cousins and grandparents  and rented a  little cottage on the beach.  We had fresh lobster and especially enjoyed the beautiful sunrise and sunsets!  Allie captured a picture and then painted it for me as a Christmas gift!  She is so talented!

We also attended the Anne of Green Gables Musical! It was very entertaining!



I hope to go again and take Hailey since she was away at college at the time!  She needs a hat and red braids like her sisters!  Unfortunately Hailey Ann is sad we didn't add an "e" so she could be sophisticated like Anne!
